Cooking on gas?
- Set one burner to low and leave the grill lid open.
- Melt the chocolate in its bowl at the edge of the grates, then hold the marshmallow skewers about 10 cm (4 inches) above the grates over the lit burner, turning them slowly.
- Put the chocolate in a small heatproof bowl or pot and set it at the edge of the grid over low coals. Stir now and then until it melts, then pull it off the heat.
- Lay out half the biscuits, flat side up, on a board.
- Thread 3 or 4 marshmallows onto each skewer, leaving a little space between them.
- Hold the skewers about 10 cm (4 inches) above low, glowing coals. Turn them slowly for 1 to 2 minutes until golden outside and soft inside.
- Push the hot marshmallows off the skewer onto a biscuit with a second biscuit, then press down to make a sandwich.
- Spoon a little melted chocolate over the top and eat them while warm.
Done when: the marshmallows are puffed, golden and lightly charred in spots, and soft right through when pressed between the biscuits.
Tips
- Use the dying coals after the meat is off. Flames scorch the outside before the middle melts.
- Metal skewers get very hot. Let children use long wooden sticks soaked in water, and keep them back from the fire.
- Swap the plain chocolate for mint chocolate for a peppermint version.
S’mores began as an American campfire treat, but toasting marshmallows over the last coals has long been part of a South African braai, especially with children around. Local cooks often swap the graham crackers for Tennis biscuits, the coconut biscuits found in most South African pantries. It uses the fire after the meat is done and needs almost no work. For another dessert on the coals, try banana boats.
